Ingredients
  

  • 1/4 cup high-quality extra virgin olive oil, separated
  • 1 tablespoon freshly grated Parmesan
  • 1 loaf rustic bread or a French baguette, cut into 1/2-inch thick slices
  • 1 small Persian cucumber, peeled and diced optional
  • 1 garlic clove, whole and peeled
  • 1 garlic clove, finely minced or pressed
  • 1 Roma tomato, chopped, or 1/2 cup halved cherry tomatoes
  • 1 ripe avocado, peeled, pitted, and chopped into cubes
  • 1 tablespoon white balsamic vinegar or sherry vinegar
  • 1/4 teaspoon fine sea salt, or to taste
  • 1/4 cup fresh basil, thinly sliced
  • A drizzle of honey

Method
 

Step 1: Prepare the Bread
  1. Start by preheating your oven to 400°F (200°C). Lay the slices of bread on a baking sheet. Drizzle half of the olive oil over the bread, making sure each slice gets coated.
Step 2: Toast the Bread
  1. Place the baking sheet in the oven and toast for about 10 minutes or until the bread is golden brown. Flip halfway through to ensure an even crispness. Once toasted, rub the whole garlic clove on each slice for a wonderful garlic flavor.
Step 3: Mix the Toppings
  1. In a bowl, combine the diced avocado, chopped tomatoes, and diced cucumber (if using). Add the minced garlic, white balsamic vinegar, sea salt, and most of the basil (reserve some for garnishing). Gently mix to combine.
Step 4: Assemble the Bruschetta
  1. Once the bread is toasted, remove it from the oven and let it cool slightly. Spoon the avocado-tomato mixture generously onto each slice.
Step 5: Finishing Touches
  1. Drizzle the remaining olive oil over the bruschetta. Sprinkle the grated Parmesan cheese on top and finish off with a drizzle of honey and the reserved basil.
