Ingredients

Ingredients
  • 3 large eggs preferably at room temperature
  • 1/2 teaspoon almond extract this is optional, but it adds depth
  • 1 1/2 cups whole milk at room temperature
  • 1 teaspoon pure vanilla extract or use vanilla bean paste for a richer flavor
  • 1 1/2 cups granulated white sugar
  • 2 1/4 cups plain all-purpose flour make sure it’s leveled
  • 1/2 cup unsalted butter softened to room temperature
  • 1 teaspoon fine sea salt
  • 3 teaspoons baking powder I recommend aluminum-free for a cleaner taste
  • For the Buttercream Icing double batch for a layer cake
6 cups powdered confectioners’ sugar (sifted for smoother texture)
  • 2 sticks unsalted butter also softened
  • 4 teaspoons butter flavoring or clear vanilla extract as a substitute
  • 1/4 teaspoon salt to balance the sweetness
  • 4–8 tablespoons whole milk added gradually for the desired consistency

Method

Step 1: Preheat the Oven
  1. Before you dive into mixing ingredients, preheat your oven to 350°F (175°C). This ensures an even bake.
Step 2: Prepare the Baking Pans
  1. Grease and flour two 9-inch round cake pans. This prevents sticking and makes for easy removal later. Don’t skip this step; a cake stuck to the pan is just sad.
Step 3: Cream the Butter and Sugar
  1. In a large mixing bowl, beat the softened butter with the sugar until the mixture is light and fluffy. This process should take about 3–5 minutes.
Step 4: Add the Eggs
  1. Beat in the eggs one at a time. Make sure to incorporate each egg fully before adding the next. This helps maintain the structure of the cake.
Step 5: Mix Wet Ingredients
  1. Pour in the milk, vanilla extract, and almond extract. Mix until well combined. The batter should be smooth and creamy.
Step 6: Combine Dry Ingredients
  1. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add this dry mix to the wet ingredients. Blend until just combined. Overmixing can lead to a tough cake, so be gentle!
Step 7: Pour and Level the Batter
  1. Divide the batter evenly between the prepared pans. Use a spatula to level the tops for an even rise.
Step 8: Bake
  1. Place the pans in the preheated oven and bake for 30-35 minutes. They should look golden, and a toothpick poked into the center should come out clean.
Step 9: Cool the Cakes
  1. Once baked, allow the cakes to cool for 10 minutes before transferring them to a wire rack. Let them cool completely before frosting.
Step 10: Make the Buttercream Frosting
  1. In a separate bowl, beat the softened butter until creamy. Gradually add the powdered sugar, mixing well. Incorporate the butter flavoring, salt, and milk until you reach your desired consistency.
Step 11: Frost the Cake
  1. Place one cake layer on your serving plate. Spread a generous amount of buttercream on top. Position the second layer on top and apply frosting to the top and sides of the cake. Use a spatula to create a smooth finish.
Step 12: Serve and Enjoy
  1. Slice into the cake and enjoy the fruits of your labor. Remember, every slice should command attention; it’s your special day!

Notes

  • Room Temperature Ingredients: Allow butter, eggs, and milk to reach room temperature before mixing. This ensures even blending.
  • Sift the Flour: Sifting flour removes lumps and aerates it. It helps in achieving a lighter cake.
  • Don’t Overmix: Combine ingredients until just blended. Over-mixing activates gluten, resulting in a denser cake.
  • Baking Time: Ovens vary, so start checking your cake a few minutes before the recommended time.
  • Cool Completely: Frosting a warm cake can lead to melting, so be patient! Ensure it’s entirely cooled before frosting.
