Method
 

Step 1: Preparing the Scallops
  1. Start by rinsing the scallops under cold water and patting them dry with paper towels. Removing excess moisture is crucial for getting that beautiful sear.
Step 2: Making the Spice Mix
  1. In a small bowl, combine the smoked paprika, cayenne pepper, garlic granules, onion granules, thyme, oregano, salt, and black pepper. Mix well to ensure an even distribution of spices.
Step 3: Seasoning the Scallops
  1. Sprinkle the spice mix generously over both sides of the scallops. The spices should cover the scallops well, creating a delightful crust later.
Step 4: Heating the Pan
  1. Heat a large skillet over medium-high heat. Add 1 tablespoon of olive oil and 1 tablespoon of butter. Allow the oil and butter to heat until sizzling but not smoking.
Step 5: Cooking the Scallops
