Bruschetta Crostini Recipe

Bruschetta Crostini Recipe - Recipes From Chef

Bruschetta crostini is a delightful appetizer that pairs wonderfully with a variety of beverages and dishes to create a memorable dining experience.
A chilled Pinot Grigio or a light-bodied Chianti enhances the fresh flavors of the tomatoes and basil, with their acidity complementing the balsamic vinegar in the topping.
For craft beer enthusiasts, a refreshing pilsner or a hoppy American pale ale provides a crisp contrast that complements the savory notes.
The crostini also pairs beautifully with a cheese platter featuring mozzarella, goat cheese, or feta, offering a delightful mix of textures and flavors. To add more variety, an antipasto selection with olives, marinated vegetables, and prosciutto brings an exciting array of tastes to the table.
For a refreshing touch, a bright, citrusy salad, like a simple arugula salad with lemon vinaigrette, can elevate the bruschetta and add the perfect zest to the meal.

Ingredients

  • 1 baguette, cut into diagonal slices ~16 pieces
  • Olive oil, for brushing on the crostini
  • 1 Tablespoon extra-virgin olive oil, plus more for drizzling on the crostini
  • 2 cups diced cherry or Roma tomatoes about 1/4 inch
  • 1/2 cup fresh basil, thinly sliced or roughly torn, plus extra for garnish
  • 3 cloves garlic, finely minced
  • 1 Tablespoon shallot, minced
  • 2 Tablespoons aged balsamic vinegar
  • Salt and freshly ground black pepper, to taste
  • 1 teaspoon honey

Method

Step 1: Prepare the Baguette
  1. Preheat your oven to 400°F (200°C). Cut your baguette into diagonal slices, about ½ inch thick. Arrange the pieces on a baking sheet. Don't overcrowd the sheet, as you'll want each slice to toast evenly.
Step 2: Add Olive Oil
  1. Brush each slice lightly with olive oil. This step is crucial as it will help the bread crisp up nicely in the oven.
Step 3: Toast the Bread
  1. Bake the baguette slices for about 8-10 minutes or until they are golden brown. Keep an eye on them! You don’t want any charred bread ruining your masterpiece.
Step 4: Prepare the Topping
  1. While the bread is toasting, combine your diced tomatoes, minced garlic, shallots, and fresh basil in a bowl. Add the aged balsamic vinegar, a splash of olive oil, honey, salt, and pepper. Gently mix everything together, ensuring the flavors marry beautifully.
Step 5: Assemble the Crostini
  1. Once your baguette slices are perfectly toasted, take them out of the oven. Let them cool for a minute. Then, spoon your tomato mixture onto each slice generously.
Step 6: Final Touch
  1. Drizzle a little more olive oil, a sprinkle of salt, and perhaps a few extra basil leaves for garnish before serving. The crostini is now ready to impress!

Notes

  • Choose ripe tomatoes: The flavor of your bruschetta relies heavily on the quality of your tomatoes. Heirloom varieties can make a big difference.
  • Don’t skip the toasting step: Toasted bread adds crunch. It also helps to prevent the base from getting soggy once the topping is added.
  • Let toppings sit: Allow your tomato mixture to sit for at least 10 minutes before assembling. This gives flavors time to mingle.
  • Experiment with spices: Consider adding red pepper flakes for heat or a bit of oregano for a different flavor profile.
  • Make ahead: Prepare your toppings in advance. Just assemble the crostini shortly before serving to keep the bread crispy.
