Ingredients

  • 1 loaf of French baguette, cut into 1/2 inch thick slices
  • 8 ripe Roma tomatoes, chopped
  • 8 cloves of garlic, finely minced
  • 12 fresh basil leaves, finely sliced chiffonade
  • 1/4 cup premium extra virgin olive oil
  • 2 tablespoons aged balsamic vinegar or more to taste
  • 3/4 teaspoon sea salt
  • 1/2 teaspoon freshly ground black pepper
  • Soft, plain goat cheese
  • Balsamic glaze for drizzling
  • 1 tablespoon of freshly chopped oregano
  • A pinch of red pepper flakes

Method

Step 1: Toast the Bread
  1. Begin by preheating your oven to 400°F (200°C). Arrange the slices of baguette on a baking sheet. Brush both sides of each slice with olive oil. Bake them for about 5-6 minutes, or until they are golden brown and crispy. Keep an eye on them; burnt bread is a disappointment!
Step 2: Prepare the Tomato Mixture
  1. While the bread is toasting, chop the tomatoes and place them in a mixing bowl. Add the minced garlic, basil, oregano, salt, and pepper. Drizzle in the balsamic vinegar and olive oil. Toss everything together gently to combine. This mix should sit for a few minutes, allowing the flavors to meld together beautifully.
Step 3: Spread the Goat Cheese
  1. Once your slices of bread have cooled slightly, it’s time to add the goat cheese. Spread a generous layer on each slice, letting it create an inviting canvas for the tangy tomato topping.
Step 4: Top with Tomato Mixture
  1. Spoon the tomato mixture generously onto each goat-cheese-covered slice. Be as hearty as you desire—who doesn’t love a pile of toppings?
Step 5: Drizzle with Balsamic Glaze
  1. Finish with a drizzle of balsamic glaze over the top. If you want a kick, sprinkle the red pepper flakes; they add a delightful warmth.
Step 6: Serve Immediately
  1. Once assembled, bruschetta is best served right away while the bread remains crispy. Enjoy them fresh with friends and family; these delightful bites are sure to impress!

Notes

  • Use Quality Ingredients: The simplicity of bruschetta means quality matters. Choose ripe, in-season tomatoes for the brightest flavor.
  • Chill the Toppings: Letting your tomato mixture sit in the fridge for a while intensifies the flavors.
  • Experiment with Cheese: If goat cheese isn't your thing, feta or Ricotta can add a different twist.
  • Basil Substitute: If fresh basil isn’t available, try using fresh parsley or a bit of Italian seasoning.
  • Serve Fresh: Bruschetta is always best fresh! Prepare each piece just before serving.
