- Bring a pot of salted water to a boil and cook the whole wheat angel hair pasta according to package instructions. Drain and set aside, reserving a bit of the pasta water for later.

- In a large skillet, melt 2 tablespoons of butter over medium-high heat. Add the diced chicken and cook for about 5-7 minutes until golden and cooked through. Season with salt and pepper. Remove the chicken from the skillet and set aside.

Deglaze the pan with the dry white wine (or chicken broth), scraping any brown bits that may have stuck. Let it simmer for a couple of minutes to reduce slightly.
Step 5: Combine Together
- Return the chicken to the skillet and mix in the halved cherry tomatoes and capers. Stir in the pasta followed by a squeeze of lemon juice. Toss everything to coat well. If it seems dry, you can add a splash of the reserved pasta water.
Step 6: Finish with Spinach
- Incorporate the baby spinach and let it wilt just a minute. Remove the skillet from the heat. For a final touch, sprinkle with fresh basil and a little more lemon juice to brighten everything up.
Step 7: Serve and Enjoy
- Plate your Chicken Scampi immediately, garnishing with additional basil if desired. Serve with your favorite sides. Enjoy the feast!
