Ingredients
  

  • 2 large farm-fresh eggs
  • 3 cans of creamy-style sweet corn
  • ½ cup melted unsalted butter, divided
  • 1 cup finely crushed butter crackers, divided
  • ¼ cup shredded sharp cheddar cheese
  • ½ teaspoon smoked paprika
  • ¼ teaspoon garlic powder
  • ¼ teaspoon freshly ground black pepper

Method
 

Step 1: Preheat the Oven
  1. First things first, preheat your oven to 350°F (175°C). This ensures a perfect bake, giving the corn scallops a golden finish.
Step 2: Prepare the Baking Dish
  1. Grease a baking dish or casserole dish with a little of that melted butter. This helps ensure everything cooks evenly and doesn’t stick.
Step 3: Combine the Ingredients
  1. In a large mixing bowl, whisk together the eggs until frothy. Next, add the creamy-style sweet corn, melted butter (reserve a tablespoon for later), crushed butter crackers (again, save a bit), sharp cheddar cheese, smoked paprika, garlic powder, and black pepper. Stir until just combined.
Step 4: Transfer to the Baking Dish
  1. Pour the corn mixture into the prepared baking dish, spreading it out evenly.
Step 5: Top the Corn Scallop
  1. Sprinkle the reserved butter crackers and melted butter on top of the corn mixture. This creates a lovely, crispy layer during baking.
Step 6: Bake
  1. Place the dish in the preheated oven and bake for 35-40 minutes, or until the top is golden brown and set in the center.
Step 7: Cool & Serve
  1. Once out of the oven, allow the corn scallops to cool for about 10 minutes. This gives the dish a chance to firm up. Now, grab your fork and dig in!

Notes

  • Use Fresh Corn: If it’s in season, fresh corn can elevate this dish. Cut it off the cob and use it in place of canned corn for more sweetness.
  • Experiment with Cheese: Want a different flavor? Try gruyere or gouda instead of cheddar. Each will lend its unique profile to the dish.
  • Spice it Up: If heat is your thing, consider adding diced jalapeños or a sprinkle of cayenne pepper for a kick.
  • Add Vegetables: Boost the nutrition with diced onions, bell peppers, or even spinach mixed in.
