Greek Pizza - Recipes From Chef

Let me tell you a story. Picture a warm summer evening, the sun dipping behind the hills, while laughter and chatter fill the air. The aroma of something delicious wafts through the open door. That aroma? It's coming from my kitchen, where I’m whipping up Greek pizza.
Now, I know what you might be thinking: What exactly is Greek pizza? Well, think of it as a marriage between traditional Italian and Greek flavors. It’s not just a pizza; it’s a celebration of Mediterranean ingredients. Feta cheese, Kalamata olives, and fresh veggies dance on a crust of golden perfection.
This pizza has a special place in my heart. The first time I tried it, the flavors burst in my mouth like a summertime firework. I knew I had to make it a staple in my kitchen. If you're looking to expand your pizza repertoire or impress your friends at a gathering, Greek pizza is your golden ticket.

Ingredients

Pizza Dough and Sauce Ingredients:
  • 1 batch pizza dough easy whole wheat or 1 lb store-bought
  • 2/3 cup pizza sauce homemade or store-bought, marinara, or 32 oz whole tomatoes drained and hand-crushed
  • 1/2 teaspoon dried Italian oregano
  • 1 teaspoon garlic powder
Cheeses:
  • 8 oz mozzarella cheese shredded, low-moisture, part-skim, about 2 packed cups
  • 1/2 cup feta cheese crumbled, 2–3 oz
Toppings:
  • 15 Kalamata olives pitted and halved lengthwise
  • 1/2 cup roasted red pepper cut into thin 1-inch strips, from about 1/2 medium pepper, jarred or fresh
  • 1/2 cup artichoke hearts marinated or jarred, quartered and halved lengthwise
  • 1 teaspoon capers
Optional Garnishes:
  • Red pepper flakes to taste
  • 3–4 fresh basil leaves torn into small pieces

Method

Step 1: Prepare the Dough
  1. Start by preheating your oven to 475°F (245°C). If you’re using homemade dough, make sure it’s ready. Roll it out on a floured surface to your desired thickness. I love a thicker crust, but you do you!
Step 2: Create the Sauce
  1. If you’re using canned tomatoes, take those whole tomatoes, drain, and crush them in a bowl. Toss in the oregano and garlic powder. This mix brings a fresh kick to your pizza that store-bought sauce can’t touch.
Step 3: Spread the Sauce
  1. Once your dough is shaped, transfer it to a baking sheet or pizza stone. Evenly spread the sauce over your dough. Go right up to the edges; we'll be adding toppings soon.
Step 4: Add the Cheese
  1. Here comes the gooey goodness! Sprinkle the shredded mozzarella generously over the sauce. Feel free to add more if you want that decadent stretch when you take a slice. Next, crumble the feta cheese over the top, ensuring even coverage.
Step 5: Pile on the Toppings
  1. Now for the fun part! Arrange the Kalamata olives, roasted red peppers, artichoke hearts, and capers on top of the cheesy base. Don’t be shy; layer it as artfully as you like.
Step 6: Bake to Perfection
  1. Pop your pizza into the preheated oven. Bake it for about 15-20 minutes or until the crust is golden brown and the cheese is bubbly. I usually stand by the oven for the last few minutes; it’s hard to resist that aroma!
Step 7: Garnish & Serve
  1. As soon as it’s out of the oven, garnish with red pepper flakes and torn basil. Allow it to cool for a couple of minutes, then slice it up!

Notes

  • Use High-Quality Ingredients: Fresh cheese and high-quality olives can take your pizza from good to phenomenal.
  • Experiment with Toppings: If you have other veggies in the fridge, toss them on! Spinach, zucchini, or even sun-dried tomatoes work well.
  • Don’t Overcrowd: It’s tempting to load the toppings, but too many can leave the pizza soggy.
  • Let the Dough Rest: If you're making dough from scratch, allowing it to rest at room temperature makes it easier to roll out.
  • Check the Bottom: If you like a crispy crust, use a pizza stone or a preheated baking sheet.
