Ingredients
  

  • 12 oz fresh blueberries, washed
  • 1 lb freshly diced strawberries
  • 2 mandarin oranges, segmented
  • 4 ripe kiwis, peeled and chopped
  • 1 lb freshly chopped pineapple chunks
  • 1/2 cup fresh mint leaves, chopped for a refreshing herbal note
  • 12 oz seedless red grapes, halved
  • 1 ripe banana, thinly sliced optional
  • 1/4 cup pomegranate arils adds a pop of color and tartness
For the Honey Lime Dressing:
  • 1/4 cup pure honey
  • 2 tsp finely grated lime zest from 2 medium limes
  • 1 1/2 Tbsp freshly squeezed lime juice

Method
 

Step 1: Prepare the Fruits
  1. Start by washing and prepping your fruits. Wash the blueberries thoroughly under cold water, and set them aside in a large mixing bowl. Dice the strawberries into bite-sized pieces. Use a sharp knife to carefully slice into the flesh.
Step 2: Segment the Mandarins
  1. Using a sharp knife, carefully peel the mandarins. Segment them by cutting between the membranes. 
    This will give you beautiful pieces that pop in your salad. Toss these into the bowl along with the blueberries and strawberries.
Step 3: Chop the Kiwis and Pineapple
  1. Next, peel the kiwis and chop them into chunks. They add a jet of sweet-tart flavor. Trim the pineapple, removing the skin and core, and chop the flesh into biteable pieces.
     The pineapple’s sweetness balances out the other fruits.
Step 4: Prepare the Grapes
  1. Halve the seedless red grapes and add them to the fruit bowl. Their sweetness and crunchy texture provide a delightful contrast. If using the banana, you can slice it thinly now and add it in.
