  • 1/4 teaspoon red pepper flakes
  • 1/4 cup fresh Parmesan cheese
  • 2 tablespoons fresh basil, chopped
  • 2 medium tomatoes, peeled, seeded, and diced approximately 2 cups
  • 1 tablespoon extra virgin olive oil
  • 1 pound boneless, skinless chicken breasts, cut into strips
  • 1 garlic clove, finely minced
  • 1 package Knorr® Creamy Chicken Rice Side or any preferred chicken-flavored rice mix
  • 1/2 cup shredded mozzarella or Italian blend cheese

Method
 

Step 1: Prepare the Chicken
  1. Start by heating a drizzle of olive oil in a large skillet over medium-high heat. Once the oil shimmers, it’s time to add the strips of chicken breast. Season the chicken lightly with salt and pepper. Cook, turning occasionally to get an even golden brown, for about 4-5 minutes.
Step 2: Add the Garlic and Spice
  1. Once the chicken is nicely browned, stir in the minced garlic and red pepper flakes. It's like a flavor bomb bursting in your kitchen! Let that cook for about 1 minute until you can smell the garlic mingling with the chicken.
Step 3: Incorporate the Tomatoes
  1. Now for the pièce de résistance! Add the diced tomatoes and continue cooking for another 3-4 minutes. The tomatoes will soften and begin to meld with the chicken, creating a beautiful mix of flavors.
Step 4: Add the Knorr Rice Mix
  1. Pour in the Knorr Creamy Chicken Rice mix, making sure it’s evenly distributed. Stir everything together, ensuring the rice is well blended with the chicken and sauce.
Step 5: Let it Simmer
  1. Add 2 cups of water to the skillet, bring it to a gentle boil, and cover. Reduce heat to low and let it simmer for about 10-12 minutes. This is where the magic happens. Your kitchen will smell heavenly!
Step 6: Finish with Cheese and Herbs
