  • 1 lobster , steamed, shelled, and cut into bite-sized pieces 1 1/2 to 1 3/4 pounds
  • 1/2 cup finely chopped celery
  • 1 small shallot, peeled and thinly sliced
  • 1 cup halved cherry tomatoes
  • 2 tablespoons dry sherry
  • 2 tablespoons white wine vinegar
  • 1/4 cup fresh parsley or basil, finely chopped
  • 1/4 cup extra-virgin olive oil, plus extra for drizzling
  • 1/2 teaspoon red pepper flakes optional, for a slight kick

Method
 

Step 1: Prepare the Lobster
  1. Start with the lobster. Steam it until cooked, which usually takes about 12-15 minutes for this size. Let it cool, then remove the meat from the shell and cut it into bite-sized pieces. The quality of the lobster is essential, so if you can, opt for fresh, sustainably sourced lobster.
Step 2: Toast the Bread
  1. While the lobster is cooling, preheat your oven to 400°F (200°C). Slice the Italian bread into 1-inch thick pieces.
