Ingredients

Pesto (if not using store-bought):
  • 2 cups packed fresh basil leaves
  • ¼ cup freshly grated Parmesan cheese
  • ¼ cup sunflower seeds, pine nuts, or walnuts choose your preference
  • 2 garlic cloves, roughly chopped
  • 2 teaspoons fresh lemon juice
  • ½ cup extra virgin olive oil more as needed for desired texture
  • Salt and freshly cracked black pepper, to taste
  • 1 tablespoon nutritional yeast for a cheesy, umami flavor
Tomato Topping:
  • 1 lb Roma tomatoes about 6-8
  • 2-3 tablespoons extra virgin olive oil
  • 3 garlic cloves, minced
  • 1 teaspoon balsamic vinegar
  • Salt and freshly cracked black pepper, to taste
  • 1 tablespoon chopped fresh basil for added freshness
Crostini:
  • 1 French baguette, cut into ½-inch thick slices
  • Olive oil for drizzling
  • Salt to taste
  • ½ teaspoon garlic powder optional, for extra flavor on the crostini

Method

Step 1: Prepare the Pesto
  1. Start by gathering your ingredients for the pesto. In a food processor, combine the fresh basil, your chosen nuts, Parmesan cheese, garlic, lemon juice, salt, and pepper. Pulse to combine. With the processor running, slowly drizzle in the olive oil until you achieve a smooth, creamy consistency. Taste, and adjust seasoning if necessary. Set aside.
Step 2: Make the Tomato Topping
  1. Next, move to the tomatoes. In a mixing bowl, combine the diced tomatoes, minced garlic, olive oil, balsamic vinegar, salt, and pepper. Toss gently to combine. Let this sit for about 10-15 minutes; it allows the flavors to meld together.
Step 3: Toast the Crostini
  1. Preheat your oven to 400°F (200°C). Arrange the baguette slices on a baking sheet. Drizzle with olive oil and sprinkle with salt. Bake for about 5-7 minutes on one side until golden brown, then flip and toast the other side for an additional 5 minutes. Optionally sprinkle garlic powder on the crostini for extra flavor.
Step 4: Assemble the Bruschetta
  1. Once everything is ready, it’s time to put the bruschetta together. On each toasted slice of baguette, spread a generous dollop of pesto. Top with the tomato mixture. For an extra touch, sprinkle fresh basil on top.
Step 5: Serve and Enjoy
  1. Arrange your bruschetta on a beautiful platter. If you want, drizzle with a little more olive oil or a splash of balsamic glaze for presentation.

Notes

  • Fresh Basil: Always use fresh basil for the best flavor. Dried basil won't give you the same vibrant taste.
  • Quality Ingredients: Use high-quality extra virgin olive oil and Parmesan. The better the ingredients, the better your bruschetta will taste.
  • Toast to Perfection: Don’t rush the toasting process; this step is essential for a satisfying crunch.
  • Chill Time: Allow your tomato topping to sit and mingle for at least 15 minutes. It creates a deeper flavor.
  • Experiment: Feel free to customize toppings! Add feta cheese or olives for a twist.
