Ingredients

  • 2 tablespoons fresh lime juice
  • 1 teaspoon grated ginger optional, for an added zing
  • 1/4 cup red onion or more, depending on size
  • 2 tablespoons fresh cilantro, finely chopped
  • 1 red chili, finely chopped
  • 1/2 lb small scallops preferably bay scallops
  • 1/2 teaspoon honey optional, for a touch of sweetness
  • 2 tablespoons fresh lemon juice

Method

Step 1: Prepare the Scallops
  1. Rinse your scallops under cold water and pat them dry with paper towels. Make sure they are completely clean and dry. This step is essential for the best texture in the ceviche.
Step 2: Chop the Ingredients
  1. Finely chop the red onion, cilantro, and chili. If you’re using ginger, grate it now. Use a sharp knife for precision—it makes the chopping easier.
Take a moment to appreciate the bright colors of the ingredients. It sets the stage for a beautiful dish.
Step 3: Combine Ingredients
  1. In a mixing bowl, combine the scallops, red onion, cilantro, and chili. Toss them gently to ensure everything is evenly distributed. You can already start to smell the freshness!
Step 4: Add Citrus Juices
  1. Pour the fresh lime juice and lemon juice over the scallop mixture. Give it another gentle toss. The citrus juices will begin to "cook" the scallops. It’s part of the magic of ceviche!
Step 5: Season and Chill
  1. Add the honey if you’re using it and sprinkle a pinch of salt. Adjust seasoning to your taste. Now, cover the bowl with plastic wrap and let it chill in the refrigerator for at least 20 minutes. This allows the flavors to marry beautifully.
Step 6: Serve and Enjoy
  1. After chilling, give the ceviche one last toss. Serve it in individual cups or a large bowl. Garnish with extra cilantro if desired. Now sit back and watch it disappear!

Notes

  • Fresh Scallops: Always source the freshest scallops you can find. A good seafood market is ideal.
  • Avoid Over-Marinating: Too long in the acid can make scallops rubbery. Stick to 30 minutes or less.
  • Adjust Acidity: Everyone's taste varies. Feel free to tweak the lime and lemon balance.
  • Consider Texture: If you prefer a bit of crunch, add diced cucumber or bell peppers right before serving.
  • Taste as You Go: These ingredients interact beautifully, so taste and adjust seasoning to find that perfect flavor.
