Ingredients

  • 3 large eggs, beaten
  • 2 sticks unsalted butter, softened to room temperature
  • 1 ½ cups granulated sugar
  • 4 cups cubed white bread preferably stale or toasted
  • 20 oz can of crushed pineapple, drained
  • ½ cup whole milk
  • 1 tsp vanilla extract
  • ¼ tsp ground cinnamon

Method

Step 1: Preheat the Oven
  1. Preheat your oven to 350°F (175°C). This is crucial to ensure an even bake for your casserole.
Step 2: Prepare the Baking Dish
  1. Next, grease a 9x13 inch baking dish with a little butter or non-stick spray. This will help in avoiding any sticking during the baking process.
Step 3: Mix the Ingredients
  1. In a large bowl, combine the beaten eggs, softened butter, and granulated sugar. Whisk them together until well blended. I recommend using a hand mixer if you have it; it saves time and effort!
Step 4: Add the Bread and Pineapple
  1. Now, gently fold in the cubed bread and drained crushed pineapple into the mixture. Ensure that the bread absorbs the mixture well. This is where the magic starts!
Step 5: Incorporate Milk, Vanilla, and Cinnamon
  1. In a separate bowl, mix the whole milk, vanilla extract, and ground cinnamon. Once combined, pour this mixture over your pineapple and bread mixture. Carefully stir until every piece of bread is soaked.
Step 6: Pour into Baking Dish
  1. Transfer the mixture into the prepared baking dish. Spread it evenly, ensuring all parts are submerged.
Step 7: Bake
  1. Pop the dish into your preheated oven and bake for 45-55 minutes, or until it's golden brown on top and a toothpick inserted in the center comes out clean.
Step 8: Cool and Serve
  1. Once baked, remove the casserole from the oven and allow it to cool for about 10 minutes before serving. This resting period helps it set nicely.

Notes

  • Choose Stale Bread: Stale bread or toasted bread not only holds its shape better but absorbs more of the egg mixture.
  • Use Fresh Pineapple: For an even sweeter punch, use fresh pineapple instead of canned. Just make sure to chop it finely.
  • Experiment with Add-Ins: Consider adding a little shredded coconut or crushed nuts for added texture and flavor.
  • Check for Doneness: Ovens can vary, so start checking around the 40-minute mark to avoid overbaking.
  • Cool Before Serving: Allow it to cool slightly to set the custard. This helps keep its shape when you serve it.
