Ingredients
  

  • 1 lb medium shrimp, peeled and cleaned
  • 1 1/2 cups of jasmine rice
  • 5 Tbsp unsalted butter, cut into 1/2-Tbsp chunks, divided
  • 1/2 cup finely diced yellow onion
  • 1 1/2 Tbsp chopped garlic
  • 2 1/2 cups low-sodium chicken stock
  • 2 tsp lemon zest
  • Salt and freshly ground black pepper, to taste
  • 2 Tbsp fresh lemon juice
  • 1/3 cup finely grated Parmesan cheese
  • 2 Tbsp freshly chopped parsley
  • 1/4 tsp crushed red pepper flakes
  • 1/4 cup white wine

Method
 

Step 1: Prepare the Rice
  1. First, rinse the jasmine rice under cold water. This removes excess starch. Next, in a medium pot, combine the rinsed rice with 2 ½ cups chicken stock, a pinch of salt, and a tablespoon of butter. Bring to a boil, then cover and reduce the heat to low. Let it simmer for about 15-18 minutes until fluffy!
Step 2: Sauté the Aromatics
  1. While the rice cooks, grab a large skillet. Melt the remaining butter over medium heat. Add diced onion and sauté until translucent, about 3-4 minutes. Then toss in the garlic and sauté for another minute. The aroma will lift your spirits!
Step 3: Cook the Shrimp
  1. Next, we’ll introduce the shrimp. Add them to the skillet and season with salt, pepper, and red pepper flakes. Cook the shrimp until they turn pink and opaque, about 3-4 minutes on each side. Don’t walk away—overcooked shrimp can be rubbery!
Step 4: Combine & Add Flavor
  1. Once the shrimp are cooked, pour in the white wine and lemon juice. Let this simmer for another minute. Stir in the lemon zest and Parmesan cheese, mixing it well. This adds creaminess and depth.
Step 5: Finish with Rice
  1. Finally, fluff the cooked rice with a fork and fold it into the shrimp mixture. Make sure everything is well integrated, and let it rest for a moment to soak up the flavors.
Step 6: Serve and Garnish
  1. Spoon generous portions onto plates, and sprinkle with freshly chopped parsley. You can also add more cheese, a squeeze of fresh lemon, or extra pepper flakes on top for added flavor.
