Stove Top Chicken Bruschetta Recipe - Recipes From Chef

Before diving into the delicious world of Stove Top Chicken Bruschetta, let's talk about what goes well with this dish. It’s fun to play host and create a complete meal that keeps your guests raving.
A charcuterie board filled with gourmet cheeses, crusty artisan bread, and olives. Sounds appealing, right? Or perhaps a bright, zesty salad with arugula tossed in a lemon vinaigrette. This dish pairs beautifully with a light white wine, like Pinot Grigio, to enhance the flavors of the bruschetta.
You might also consider serving it alongside garlic bread. When the bread is warm and toasty, it perfectly balances the freshness of the bruschetta. Now that we have our pairings straight, let’s get cooking!

Ingredients

  • 1 ½ lbs. of chicken breast, cut into bite-sized pieces
  • 1 can of diced tomatoes
  • 1/2 cup of chicken stock
  • 1 box of chicken-flavored Stove Top Stuffing
  • 2 cloves of minced garlic
  • 1 teaspoon of dried basil
  • 1 cup of shredded mozzarella cheese
  • 1 teaspoon of Italian seasoning or poultry blend
  • 1/4 teaspoon of red pepper flakes
  • 1/2 cup of sautéed spinach

Method

Step 1: Sauté the Chicken
  1. In a large skillet, heat a tablespoon of oil over medium heat. Add the bite-sized chicken pieces and cook until they are browned. This enhances the flavors. Remember to keep an eye on them; they shouldn’t take more than 5-7 minutes.
Step 2: Add Garlic and Spinach
  1. Once the chicken is cooked, add the minced garlic. Stir for about a minute until fragrant. Then toss in the sautéed spinach. It adds color and nutrition, making your dish vibrant.
Step 3: Bring in the Tomatoes and Stock
  1. Next, pour in the can of diced tomatoes and chicken stock. Give it a good stir. The juices from the tomatoes create a lovely base for your dish, balancing the savory chicken.
Step 4: Season it Up
  1. Sprinkle the dried basil, Italian seasoning, and red pepper flakes. Mix everything well. Let it simmer for about 5 minutes. This allows the flavors to marry together.
Step 5: Incorporate the Stuffing
  1. Add the box of chicken-flavored Stove Top Stuffing to the skillet. Stir gently until the stuffing absorbs the liquid. You’ll notice it starts to thicken as it cooks.
Step 6: Top with Cheese
  1. Finally, sprinkle the shredded mozzarella cheese on top. Cover the skillet for just a couple of minutes and turn off the heat. The residual warmth will melt the cheese, creating a deliciously gooey topping.

Notes

  • Use Fresh Ingredients: Fresh garlic and herbs make a significant difference. They enhance the dish's flavor enormously.
  • Cook Over Medium Heat: This prevents the chicken from browning too quickly while ensuring it's cooked through.
  • Taste as You Go: Don’t hesitate to adjust the seasoning according to your preference. A pinch more salt or pepper can transform the dish.
  • Experiment with Toppings: Besides mozzarella, get creative! Consider adding a sprinkle of parmesan or some fresh basil before serving.
  • Let it Sit: Allow the dish to rest for a few minutes after cooking. This will help the flavors settle and make it easier to serve.
