Ingredients

  • 1/2 tsp almond extract for a subtle nutty note
  • 1 1/4 cups full-fat plain Greek yogurt 304 g, room temperature
  • 2 tsp pure vanilla extract
  • 2/3 cup extra-virgin olive oil 155 ml
  • 1 tsp fresh lemon zest to brighten the flavor
  • 2 tsp double-acting baking powder
  • 1 3/4 cups all-purpose flour 248 g, spooned and leveled
  • 3 large eggs at room temperature
  • 1 cup superfine granulated sugar 200 g
  • 1/4 tsp baking soda
  • 1/2 tsp fine sea salt

Method

Step 1: Preheat the Oven
  1. First, preheat your oven to 350°F (175°C). This ensures that your cake bakes evenly. While the oven heats up, you may want to grease your cake pan with olive oil or line it with parchment paper.
Step 2: Prepare Your Ingredients
  1. Gather all your ingredients. It’s essential they are at room temperature, especially eggs and yogurt. This helps incorporate air into the batter, resulting in a fluffier cake.
Step 3: Mix Wet Ingredients
  1. In a large mixing bowl, combine the Greek yogurt, sugar, and eggs. Whisk until everything is well-blended and creamy. Then, add in the olive oil, vanilla extract, and almond extract. Keep whisking!
Step 4: Incorporate Dry Ingredients
  1. In another bowl, mix the flour, baking powder, baking soda, and salt. Gradually add this dry mixture to the wet ingredients. Stir gently until just combined. Be careful not to overmix; a few lumps are perfectly fine.
Step 5: Add Lemon Zest
  1. Now, add the fresh lemon zest to the mixture. This step is crucial; it brings a delightful brightness to the cake!
Step 6: Transfer to the Cake Pan
  1. Pour the batter into your prepared cake pan. Use a spatula to spread the batter evenly.
Step 7: Bake
  1. Place the cake in the preheated oven and bake for 30 to 35 minutes. You’ll know it’s done when the top is golden brown and a toothpick inserted into the center comes out clean.
Step 8: Cool
  1. Once baked, remove the cake from the oven and let it cool in the pan for about 10 minutes. After that, gently turn it out onto a wire rack to cool completely.

Notes

  • Use High-Quality Yogurt: Opt for full-fat Greek yogurt for a rich texture.
  • Room Temperature Ingredients: Make sure your eggs and yogurt are at room temperature. This helps with even mixing and better texture.
  • Don’t Overmix: Stir just until combined to keep the cake light and fluffy.
  • Baking Pan: For a more elegant presentation, use a bundt pan. Just adjust the baking time accordingly.
  • Add Variations: Feel free to fold in some chocolate chips or nuts for added texture and flavor!
